Today’s This Week’s Cravings theme is SUMMER SALADS and I’m sharing Coconut Cream Fruit Salad, filled with berries and apples (or really, your choice of fruits) and a delicious whipped coconut cream. I learned this delicious trick from Daily Dish Recipes. And, bonus for my vegan readers: it’s a super easy way to make vegan whipped cream! The original uses a bit of powdered sugar in the cream, but I left that out. Feel free to use powdered sucanat if you like it a little sweeter and fluffier.
Ingredients
1 can of coconut milk4 cups mixed berries (fresh or frozen)2 apples, cored and sliced1 1/2 Tbs. lemon juiceInstructions
First, chill the can of coconut milk for at least 12 hours. {overnight}
Toss apple slices in lemon juice to prevent browning. In a large serving bowl, toss in all of the fruit.
To make the whipped coconut milk: Remove the can from the refrigerator – open and pour off most of the liquid that has accumulated (I like to drink the liquid while the kids eat the salad…they don’t notice my yummy drink this way). Transfer the remaining coconut milk to a mixing bowl and beat on medium-high until the coconut cream is nice and thick and fluffy.
Toss the whipped coconut milk into the fruit and gently mix it all up.

The Results
The kids went crazy for this and it was incredibly fast, simple and delicious to whip up. Pun intended.
