I really felt like a salad today for whatever reason and I wanted to get away from my usual creamy dressing salad. So I decided on to break out some Roasted Corn Salsa to mix in with my greens for something different. In this holiday season, it’s nice to have a light, refreshing meal occasionally to make you want to tackle the heavy stuff again another day. I debated about adding black beans (which would probably be delicious and add protein), but I was in a simple mood and decided to go with it.
Roasted Corn Salsa Salad
- 5 ounces mixed greens
- 1 cup Roasted Corn Salsa
- tortilla strips, baked or fried
- Mexican cheese (optional)
Toss salad with roasted corn salsa and top with tortilla strips (or broken taco shells or tortilla chips) and cheese, if desired.
This turned out pretty well. My husband and I liked the salad. The kids had salsa tortillas with mixed greens on the side. They enjoyed theirs, too.
