I absolutely loved this dish. So did the kids. My husband said it was really good, in spite of being “kinda weird.” I’m not sure what that means, but he ate all of his portion, so we’ll call that positive feedback.

I never thought of combining peaches with curry, but your quinoa sounds wonderful – and I love the cashews in it. The sandwich using spaghetti squash sound fantastic too – that is such a cool idea, and it sounds yummy. Kristi, help me out. I stopped posting here because, my recipes are not vegan but, shame on me, I read your intro, for the first time. Blushing. It looks like meatless is alright, even if not vegan??????????What about cheese? eggs?I am going to link up and if I overstep the bounds, just let me know and please remove it.

Thanks all. Chaya: Anything meatless is perfectly fine. I just do vegan on Mondays since I'm always meatless. Gives me more of a challenge. Eggs, cheese, milk, etc. are all OK. Have a great week.
Thank you for featuring my recipe! I had a crazy Monday (well, crazier than usual–they're always crazy) and didn't have the chance to link up this week. This is the only cooking link up I do and I always feel bummed when I miss it!
