Day 12.

Buffalo Chicken French Bread Pizza
Ingredients
2 large French bread loaves (I used 1 1/2 baguettes instead)
5 Tbsp. buffalo wing sauce (3 parts hot sauce to 2 parts butter)
1/2 C blue cheese dressing
1 C Ranch dressing
2 C “chicken,” cooked
2 C cheddar cheese, shredded
2 C Monterey Jack cheese, shredded
1 C Parmesan cheese, shredded
1/2 C gorganzola cheese, crumbled

Directions

Slice baguettes in half, making two loaves; slice loaves in half lengthwise. You should now have four loaf halves per original loaf. If you’re using the longer baguettes, you’ll have 8 slices. Set two aside for another day. Mix 1/4 C of wing sauce, blue cheese dressing, and ranch dressing and spread on bread, reserving enough to coat chicken. Coat chicken pieces in sauce. Add cheeses and chicken to bread slices. Bake at 375F for 20-25 minutes or until heated through and cheese is brown and bubbly. Drizzle extra buffalo sauce over the pizzas.

The Results
Yumtastic. I’ve never been a huge fan of buffalo wings (for obvious reasons), so I wasn’t sure if I’d like this. But I do love hot sauce, so I gave it a shot. I once tried to make “wings” from the Quorn “chicken,” it did not go well. This, this was delicious. My bread, however, was a little too hard for the toddler to chew. So, if you’re making this for you and kids, I’d suggest slipping in a bagel pizza with the same toppings for the young ones. The toddler did love the toppings though. This is a definite repeat, as I’ve been telling my husband, for 2012, when I can repeat recipes. Delicious.
